4th of July

We spent this fourth of July at the farm eating Grandma's soul food and shooting fireworks. Ben threw TWENTY boxes of snappers, and thought the sparklers were hilarious. Everytime he would scare his grandmother with a snapper he would do a little victory dance. We read The Star-Spangled Banner by Amy Winstead, a children's book that tells the story of when Francis Scott Key wrote our national anthem.

Recipe for this delicious Strawberry Salad
2 c. pretzels, crushed
4 tbsp. sugar
3/4 c. melted butter
8 oz. pkg. softened cream cheese
1/2 c. sugar
8 oz. Cool Whip
1 lg. box strawberry Jello
2 c. boiling water
2 pkgs. frozen strawberries, thawed and drained
1 pkg. frozen blueberries, thawed and drained
Mix pretzels, 4 tablespoons sugar, and butter together; press into bottom of 9 x 13 inch pan. Bake at 400 degrees for 10 minutes and let cool completely. In mixing bowl, fold Cool Whip into cream cheese and 1/2 cup sugar. Spread over cooled crust. Dissolve Jello into boiling water. Add strawberries(optional) to Jello and pour over cream cheese. Chill and let set. Spread remainding Cool Whip on top and arrange strawberries & blueberries!
